Hudson Valley properties are the ones hibachi was made for: room outside, a view worth eating in front of, and guests who drove up for the weekend rather than out for dinner. The chef arrives about half an hour before you want to eat, sets the grill up outdoors, and cooks in front of everyone.
A lot of what we cook up here is for weekend houses and rentals — people who came up from the city on Friday and want Saturday dinner handled without anyone leaving the property. Give us the rental address and we will go to it; no one needs to be a homeowner to book.
Where it happens
Up here the setups are less uniform than downstate. We have cooked on lawns at Rhinebeck weddings, on decks over the river in Cold Spring and Beacon, in barn aprons in Columbia County and on gravel driveways at Ulster rentals. Any of it works as long as the ground is flat and there is open sky above the grill.
Indoor hibachi is the one thing we cannot do — the griddle produces more smoke than a house can take. An open barn, a carport or a canopy covers the rain, and the grill itself puts out enough heat that autumn evenings in the valley are comfortable around it.

Travel is measured from our nearest chef base. Within 10 miles there is no travel fee at all. From 10 to 30 miles it is a flat $30.
